Sauces Production Concept

The PERFIPROCESS range of machinery can provide solutions for most of the sauces, emulsions and dipping's applications.

Processes can be performed and results can be achieved using different technologies.

The technologies can go from simple emulsions to product reduction and concentration, handling particles or even cook and cool at the same machine.

The concept is developed for fast and user friendly product changings and virtually no product losses.

Cleaning is always a major concern, so the PERFIPROCESS range was developed as CIP ready and its own cleaning concept, automatic, efficient and environmental friendly.

Hot & Cold Processing for Sauces, Emulsions and Dippings

One Hot & Cold Processing for Sauces, Emulsions and Dippings installation comissioned and ready to service.

The setup is composed by one PERFITECH 2000, all-in-one version for hot and cold processing, using the extra exchange surface from the bottom driven reactor jacket.
The system includes process technologies such as direct steam injection, vaccum, high shear homogeneizer, powder disperser system among other key tools.

When hot processing, a PERFITHERM scraped surface heat exchanger can be used to cool down the product inline for shorter process times.

The system provides a high capacity production rate for both hot and cold process demands, on a small footprint, where all the media and ingredient are managed automatically.

A high end compact and versatile solution, made to handle most of the food products, even with particles or high viscosity.

The PERFIPROCESS Pastry Cream Production Concept

The PERFINOX solution using the PERFIPROCESS range of machinery consists in one PERFITECH All-in-One batch system, were all the ingredients are automatically dosed, mixed and homogenized.

The cooking process is performed by heating jacket and/or direct steam infusion. The vessel uses the bottom driven technology resulting in extra exchange surface and can be settled up to allow half batches without risk of burnt taste.

The cooling process is performed inline using the PERFITHERM Scrapped Surface Heat Exchanger and optionally for shorter process times, using the PERFITECH jackets.

The cleaning process is done fully automatically using a PERFICLEAN CIP station.

A new PERFITECH 2000 for Hot & Cold Processing is ready and prepared to be shipped.

The
PERFIPROCESS all in one machine will be used for sauces and dressings production, and will be capable to mix, emulsify, cook and cool at the same machine, using state of the art technologies and resulting in a very small footprint.

The CIP ready system have as main benefits:
• Splitted jackets for half or complete batches, for energy savings and no risk of burnt taste when hot processing

• Higher thermal surface exchange due to bottom driven technology

Project Installed |​ PERFICLEAN  for pastry cream processing

Location: Portugal

A new PERFICLEAN fully automatic CIP station is being finished and will be assembled at site quite soon.

His mission will be to clean a process line for pastry cream, composed by one
PERFITECH for batch production and one PERFITHERM scrapped surface heat exchanger for inline cooling.

A complete system, fully automatic using the state of the art
PERFIPROCESS concept.
