PERFINOX recently hosted another testing session at the PERFIPROCESS Technology Center as part of the VIIAFOOD project, bringing together technology, product development and industrial validation in a collaborative environment.
The session focused on the validation of the PERFICOOKER Tiltable, a versatile processing unit designed for frying, mixing and cooking food products with different viscosities and densities. The equipment integrates multiple process operations in a single system, providing manufacturers with a flexible solution for product development and industrial production.
The trials were carried out in collaboration with Decorgel and included the production of vanilla cream under real processing conditions. These activities allow process parameters, product behavior and production performance to be evaluated before industrial implementation, helping reduce development risks and accelerate scale-up activities.
The PERFIPROCESS Technology Center plays a key role in supporting food manufacturers throughout the product development journey. Through industrial-scale trials, customers can validate recipes, optimize processes and assess new technologies using equipment and solutions representative of real production environments.
This initiative was developed within the scope of the VIIAFOOD project, a collaborative platform supported by the Portuguese Recovery and Resilience Plan (PRR), created to foster innovation and competitiveness within the Portuguese agri-food sector.
