PERFINOX recently welcomed Decorgel to the PERFIPROCESS® Technology Center for another testing session carried out within the scope of the VIIAFOOD project.
The session focused on the production and validation of apple filling recipes under real processing conditions, supporting product development and process optimization activities.
The trials were performed using PERFILAB, a processing unit developed to support scale-up activities and the development of new high-viscosity food products. By replicating industrial processing conditions, the system enables manufacturers to evaluate product behaviour, validate process parameters and reduce risks before moving to full-scale production.
Testing activities such as these play an important role in accelerating product development and ensuring greater confidence during the transition from concept to industrial manufacturing.
The session was conducted in collaboration with Decorgel, reinforcing a shared commitment to innovation, process validation and the continuous development of food processing technologies.
This initiative was developed within the VIIAFOOD project, a collaborative platform supported by the Portuguese Recovery and Resilience Plan (PRR), created to promote innovation and competitiveness within the Portuguese agri-food sector.
